ONS Performance Morning Burritos

Ingredients
1/2 large tomato, diced
1 teaspoon dried fresh basil
1/2 medium potato, peeled and grated
2 tablespoons chopped onion
1 teaspoon light butter
1/2 cup egg whites
dash ground black pepper
2 (8-inch) whole wheat tortillas, warmed
2 1/2 tablespoons shredded, fat-free cheddar cheese
Cooking Directions
1. Combine tomato and basil and set aside.
2. Cook potato and onion in margarine in nonstick skillet over medium heat.
3. Cook until golden brown and tender, stirring occasionally.
4. Add egg whites and pepper to skillet.
5. Cook until done, stirring occasionally.
6. Remove from heat. Place half of egg mixture on each tortilla.
7. Top with cheese and tomato mixture.
8. Fold like a burrito and serve.
